A friend asked me to look at the L&H (Lindemann & Hoverson, ca. 1957 or most likely earlier, perhaps WWII vintage) countertop stove unit that she has.
It is built into the countertop and has a wide, flat single coil (with the entire nichrome element in one flat wide tube).
